Banana bread
A great way to use up any soft bananas mixed with staple baking ingredients you probably already have! The idea is that this is a cheap way to make something out of the bananas, assuming you already have baking powder, sugar, flour etc in your cupboards. We’ve included the prices of the larger ingredients in case you don’t have many baking materials, but for the average person who does, this is very cheap to make.
Ingredients:
100g softened butter £1.30 for 250g
100g soft brown sugar (light or dark works) £1.55 for 1kg
120g caster sugar £1.49 for 500g
2 eggs £1.75 for 6
3 or 4 bananas
250g plain flour 55p
½ tsp bicarbonate of soda
1 tsp baking powder
½ tsp/1 tsp cinnamon
100g milk or dark choc 36p
Chopped walnuts (optional)
Method:
Preheat oven to 150 degrees (fan) and line a loaf tin with greaseproof paper
Cream the butter and sugars together, add eggs and milk
Mash bananas with a fork and mix them in
Sift in the flour, bicarb, baking powder, cinnamon and mix again
Add the chocolate, nuts and any other extras you might want and mix these in with a splash of milk
Fill the loaf tin almost to the top and bake for 1hour 10 mins! It is ready when your cake skewer comes out clean.
Tip: turn oven down if cooked on outside but still raw on the inside. Also, you can wrap the top of the tin in tinfoil to slow down the baking process if it looks like it might burn.
