Greek-Style Vegetable Wrap
If vacation had a taste, this would definitely be it. This low-effort, healthy and delicious lunch is one of my favourite go-to meals, and I hope it will be yours too!

Ingredients (with prices):
- 2 medium-sized courgettes 86p (£1.29 for 3)
- 2 tomatoes 42p (£1.25 for 6)
- 1 red onion > 5p (85p for 1 kg)
- 1 brown onion 28p (85p for 3)
- 1 smaller bulb of garlic 24p (95p for 4)
- 1 tbsp olive oil
- Salt
- Black pepper
- Oregano
- 2 tortilla wraps 22p (89p for 8)
- 2tbsp Greek yoghurt 14p (£1.79 for 500g)
Method:
- Preheat the oven to 200℃
- Dice up your courgettes, tomatoes, and onions into equal-sized pieces
- Line a baking tray with baking paper and put your vegetables in it, distributing them evenly
- Finely chop up your garlic and sprinkle it over the vegetables
- Season them with salt, black pepper, and oregano to taste
- Drizzle with olive oil and cook for 30 minutes, or until the courgettes are fork-tender and visibly cooked
- Once the veggies are roasted, spread a tablespoon of Greek yoghurt over a tortilla wrap and add some salt to it
- Fill with veggies, and roll it up like a burrito
- Grill in a pan on a bit of olive oil for the ultimate experience
